Apple Walnut Snack Bars

2 large apples, peeled and finely chopped

1 cup walnuts, coarsely chopped

1 ½ cups rolled oats

½ cup honey or maple syrup

½ cup almond butter (or peanut butter)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon nutmeg

½ teaspoon baking powder

¼ teaspoon salt

½ cup dried cranberries (optional)

¼ cup raisins (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan or line it with parchment paper for easier removal.

    Mix Wet Ingredients: In a large mixing bowl, combine almond butter, honey (or maple syrup), and vanilla extract. Mix well until smooth and creamy.

      Combine Dry Ingredients: In another bowl, mix the rolled oats, chopped walnuts, ground cinnamon, nutmeg, baking powder, and salt. Stir until evenly distributed.

        Fold in Apples: Add the finely chopped apples and optional dried cranberries and raisins to the oat mixture. Stir until the apples are well coated.

          Combine Everything: Pour the dry mixture into the bowl with the wet ingredients. Stir until everything is thoroughly combined and the apples and nuts are evenly mixed.

            Transfer to Baking Pan: Pour the mixture into the prepared baking pan. Press it down firmly to create an even layer, ensuring it holds its shape during baking.

              Bake: Place in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and firm to the touch.

                Cool and Cut: Remove the pan from the oven and let it cool completely in the pan on a wire rack. After cooling, lift the bars out using the parchment paper, if used, and cut into squares or bars.
