1 large bunch of kale, stems removed and chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 large egg

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 tablespoon olive oil

1/2 teaspoon nutmeg

1 cup cooked quinoa (or rice, for a gluten-free version)

Zest of 1 lemon

Fresh parsley or basil for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Kale: In a large pan, heat the olive oil over medium heat. Add the chopped kale and sauté for about 5-7 minutes, or until wilted. Stir in the minced garlic and cook for another minute. Season with salt, pepper, and red pepper flakes (if using). Remove from heat.

      Mix the Base: In a large mixing bowl, combine the ricotta cheese, half of the mozzarella, half of the Parmesan, the egg, nutmeg, cooked quinoa, and lemon zest. Mix until well combined.

        Combine Ingredients: Gently fold in the sautéed kale mixture into the cheese mixture, ensuring it's evenly distributed.

          Assemble the Bake: Transfer the combined mixture into a greased baking dish (approximately 8x8 inches). Spread it evenly and sprinkle the remaining mozzarella and Parmesan cheese on top.

            Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the top is golden and bubbly.
