2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

Zest of 1 large orange

1 cup dried cranberries

1/2 cup walnuts, chopped (optional)

1/2 cup white chocolate chips (for dipping, optional)

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper and set it aside.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

        Add Eggs and Flavorings: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and orange zest to combine all the wet ingredients.

          Combine Wet and Dry Mixtures: Gradually add the dry ingredients into the wet mixture. Stir until just combined; do not overmix. Fold in the dried cranberries and walnuts, if using.

            Shape the Dough: Lightly flour your hands and shape the dough into a log that measures about 12 inches long and 3 inches wide. Place it on the prepared baking sheet.

              First Bake: Bake in the preheated oven for 25-30 minutes, or until the log is firm to the touch and lightly golden on top.

                Cool and Slice: Remove the baking sheet from the oven and let the log cool for about 10-15 minutes. Then, carefully transfer it to a cutting board. With a serrated knife, slice the log into 1/2-inch thick pieces.

                  Second Bake: Place the sliced biscotti back on the baking sheet, cut side down. Bake for an additional 15-20 minutes, until they are crisp and golden brown.

                    Cool Completely: Allow the biscotti to cool completely on a wire rack.

                      Optional Dipping: If desired, melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth. Dip one end of each biscotti in the melted chocolate and place on parchment paper to set.
