Ingredients

1 medium pumpkin (about 2 to 3 lbs), peeled and cut into fry-shaped pieces

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon onion powder

½ teaspoon black pepper

1 teaspoon salt

½ cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper to prevent sticking.

Prepare Pumpkin: In a large mixing bowl, combine the cut pumpkin pieces with olive oil, garlic powder, smoked paprika, onion powder, black pepper, and salt. Toss well until all pieces are evenly coated with the seasoning.

Coat with Cheese: Sprinkle the grated Parmesan cheese over the seasoned pumpkin fries. Toss gently to ensure the cheese clings to the pumpkin pieces.

Arrange on Baking Sheet: Arrange the pumpkin fries in a single layer on the prepared baking sheet. Ensure there’s space between each fry for better crispiness.

Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, flipping the fries halfway through, until they are golden brown and crispy on the edges.

Garnish and Serve: Once baked, remove the fries from the oven. Allow them to cool slightly, then garnish with fresh parsley for a pop of color. Serve warm alongside your favorite dipping sauce or enjoy them as a delicious snack on their own!
