12 oz fettuccine pasta

1 cup pumpkin puree (canned or homemade)

1 cup heavy cream

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon nutmeg

Salt and black pepper, to taste

1 tablespoon olive oil

Fresh parsley, chopped for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    Make the Alfredo Sauce: In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant (be careful not to burn it).

      Add Pumpkin & Cream: Stir in the pumpkin puree and heavy cream, mixing thoroughly. Bring the mixture to a gentle simmer.

        Combine Ingredients: Add the grated Parmesan cheese, Italian seasoning, nutmeg, and season with salt and black pepper to taste. Stir until the cheese has melted and the sauce is creamy. If the sauce is too thick, gradually add the reserved pasta water until you reach your desired consistency.

          Combine Pasta and Sauce: Add the cooked fettuccine to the sauce, tossing to thoroughly coat the pasta with the creamy pumpkin Alfredo sauce.

            Serve & Garnish: Serve immediately, garnishing with fresh chopped parsley if desired.
