Mini Cheddar Broccoli Hash Stacks

2 cups fresh broccoli florets, finely chopped

1 large russet potato, peeled and grated

1 cup sharp cheddar cheese, shredded

1/4 cup green onions, finely chopped

1/2 cup all-purpose flour

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1/4 teaspoon paprika (optional, for spice)

Olive oil, for frying

Sour cream and additional green onions, for serving (optional)

Instructions
 

Prepare the Broccoli: In a steamer basket over boiling water, steam the broccoli florets for about 3-4 minutes until bright green and slightly tender. Remove from heat, let cool, and then chop finely.

    Grate the Potato: In a large mixing bowl, add the grated potato. Squeeze out excess moisture using a clean kitchen towel or paper towels to avoid sogginess in the stacks.

      Combine Ingredients: To the grated potato, add the chopped broccoli, shredded cheddar cheese, chopped green onions, flour, beaten eggs, garlic powder, onion powder, salt, pepper, and paprika. Mix until everything is well combined.

        Form Stack Patties: Use your hands to scoop out a portion of the mixture, about 2 tablespoons, and shape them into small patties (roughly 2 inches in diameter). Repeat until all the mixture is used.

          Heat the Oil: In a large skillet, heat about 1/4 inch of olive oil over medium heat. To test if the oil is ready, drop a small piece of the mixture into the oil; it should sizzle immediately.

            Fry the Hash Stacks: Working in batches, carefully place the patties in the hot oil. Fry for about 3-4 minutes on one side until golden brown, then flip and cook for an additional 3-4 minutes on the other side. Remove from skillet and place on a paper towel-lined plate to drain excess oil.
