1 lb spicy Italian sausage, casings removed

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

2 medium carrots, sliced

2 stalks celery, chopped

1 can (14.5 oz) diced tomatoes, undrained

4 cups low-sodium chicken broth

1 can (15 oz) cannellini beans, drained and rinsed

2 cups chopped kale or spinach

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (adjust to taste)

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley for garnish

Grated Parmesan cheese for serving (optional)

Instructions
 

Sauté the sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the spicy Italian sausage, breaking it into small pieces with a wooden spoon. Cook until browned and cooked through (about 5-7 minutes). Remove and set aside.

    Cook the vegetables: In the same pot, add the diced onion, garlic, red bell pepper, carrots, and celery. Sauté for about 5-6 minutes, or until vegetables are softened.

      Combine ingredients: Add the cooked sausage back into the pot along with the diced tomatoes (with their juices), chicken broth, cannellini beans, kale or spinach, oregano, basil, and red pepper flakes. Stir well to combine.
