1 cup quinoa, rinsed

2 cups vegetable broth or water

2 cups broccoli florets (fresh or frozen)

1 cup shredded sharp cheddar cheese

1 cup cottage cheese

1/2 cup grated Parmesan cheese

1/2 cup milk (dairy or plant-based)

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/2 teaspoon dried thyme

1 tablespoon olive oil

1/2 cup breadcrumbs (optional for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth or water. Bring to a boil, then reduce the heat, cover, and let it simmer for about 15 minutes, or until all the liquid is absorbed. Remove from heat and fluff with a fork.

      Prepare the Broccoli: While the quinoa is cooking, steam or blanch the broccoli florets until bright green and just tender (about 3-5 minutes). Set aside.

        Mix the Casserole Ingredients: In a large mixing bowl, combine the cooked quinoa, steamed broccoli, sharp cheddar cheese, cottage cheese, Parmesan cheese, milk, minced garlic, onion powder, salt, black pepper, paprika, and thyme. Mix well until all the ingredients are evenly combined.

          Prepare the Baking Dish: Grease a 9x13 inch baking dish with olive oil. Transfer the quinoa and broccoli mixture into the dish, spreading it out evenly.

            Optional Topping: If you like a crispy topping, sprinkle the breadcrumbs evenly over the top of the casserole for extra texture.

              Bake: Place the casserole in the preheated oven and bake for 20 minutes, or until the cheese is bubbly and the top is slightly golden.

                Garnish & Serve: Remove from the oven, let it cool for a few minutes, and garnish with freshly chopped parsley before serving.
