Prep the Peaches: In a medium bowl, combine the sliced peaches, sugar, vanilla extract, and a pinch of salt. Toss to coat the peaches evenly and set aside to macerate for about 5 minutes.

    Preheat the Oven: While the peaches are macerating, preheat your oven to 350°F (175°C) and prepare a baking dish with cooking spray or a light coating of butter.
