1 medium sweet potato, peeled and cubed

1 cup Brussels sprouts, halved

1 cup butternut squash, peeled and cubed

1 red onion, sliced into wedges

1 cup baby carrots, halved lengthwise

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped for garnish

Prepare the Veggies: Start by washing and peeling the sweet potato, butternut squash, and slicing the Brussels sprouts and red onion. Halve the baby carrots lengthwise for quicker cooking.

    Seasoning Mix: In a large mixing bowl, combine the olive oil, garlic powder, dried thyme, smoked paprika, salt, and pepper. Mix well to create a seasoning paste.

      Toss the Vegetables: Add all the prepared vegetables into the bowl with the seasoning. Use your hands or a large spoon to toss everything together until the veggies are well coated with the oil and spices.

        Preheat the Air Fryer: Preheat your air fryer to 380°F (190°C) for about 5 minutes.

          Air Fry: Carefully place the seasoned veggie medley in the air fryer basket, making sure they are in a single layer for even cooking. If necessary, cook in batches.

            Cooking Time: Air fry for 15-20 minutes, shaking the basket halfway through to ensure even crisping. The veggies should be tender and slightly caramelized when done.
