Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice preference)

Salt and pepper, to taste

1 cup water

1/2 cup buffalo sauce (store-bought or homemade)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Optional: Celery sticks and ranch dressing for serving

Instructions

Prepare the Cauliflower: Rinse the cauliflower and cut it into bite-sized florets. Pat them dry with a paper towel to remove excess moisture.

Make the Batter: In a large mixing bowl, combine the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Gradually whisk in the water until you have a smooth batter.

Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring they are well-coated. Shake off any excess batter and place the florets on a plate.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

Air Fry the Cauliflower: Lightly grease the air fryer basket with non-stick spray or a bit of olive oil. Arrange the battered cauliflower florets in a single layer, working in batches if necessary. Air fry for 12-15 minutes, shaking the basket halfway through, until golden and crispy.

Buffalo Sauce Bath: In a separate bowl, mix the cooked cauliflower with the buffalo sauce and olive oil. Toss to ensure every piece is evenly coated.

Air Fry Again: Return the sauced cauliflower to the air fryer and cook for an additional 3-5 minutes to allow the sauce to adhere and get slightly caramelized.

Serve: Carefully remove the cauliflower from the air fryer. Garnish with chopped parsley and serve immediately with celery sticks and ranch dressing on the side for dipping.
