Air Fryer Chicken Skewers

Ingredients
  

1 lb boneless, skinless chicken breast, cut into 1-inch cubes

2 tbsp olive oil

2 tbsp lemon juice

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp dried oregano

½ tsp ground cumin

½ tsp salt

¼ tsp black pepper

1 bell pepper, cut into 1-inch chunks (any color)

1 medium red onion, cut into 1-inch chunks

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes)

Instructions
 

Marinate the Chicken:

    In a large mixing bowl, combine the olive oil, lemon juice, minced garlic, smoked paprika, oregano, cumin, salt, and black pepper. Mix well. Add the chicken cubes to the marinade, making sure they are evenly coated. Cover and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for extra flavor).

      Prepare the Skewers:

        After marinating, thread the marinated chicken, bell pepper chunks, and onion chunks alternately onto the skewers. Aim for about 4-5 pieces of chicken per skewer, interspersed with vegetables.

          Preheat the Air Fryer:

            Preheat your air fryer to 380°F (190°C) for about 5 minutes.

              Cook the Skewers:

                Place the skewers in a single layer in the air fryer basket, making sure they are not overcrowded. Depending on the size of your air fryer, you may need to cook in batches. Air fry the chicken skewers for 10-12 minutes, flipping them halfway through, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).

                  Serve:

                    Remove the skewers from the air fryer and let them rest for a couple of minutes. Serve hot with your choice of dipping sauce or over a bed of rice or salad for a complete meal.
