4 medium russet potatoes

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon dried oregano

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

Optional: freshly grated Parmesan cheese for topping

Optional: fresh parsley, chopped for garnish

Instructions
 

Prepare the Potatoes: Start by washing the potatoes thoroughly under running water. Pat them dry with a kitchen towel. Cut each potato in half lengthwise, then slice each half into wedges (around 8 wedges per potato).

    Soak the Wedges: To achieve maximum crispiness, soak the potato wedges in cold water for at least 30 minutes. This helps to remove excess starch which can make them gummy.

      Drain and Dry: After soaking, drain the potato wedges and pat them dry using clean kitchen towels or paper towels. Make sure they are completely dry to ensure a crispy texture.

        Season the Potatoes: In a large bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, oregano, salt, and pepper. Add the dried potato wedges into the bowl and toss until evenly coated with the seasoning mixture.

          Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes to ensure that the wedges will start cooking immediately upon entry.

            Cook the Wedges: Place the seasoned potato wedges in the air fryer basket in a single layer, leaving space between them for air circulation. You may need to do this in batches depending on the size of your air fryer. Cook for 15-20 minutes, shaking the basket halfway through, until they are golden brown and crispy.

              Optional Toppings: If you'd like, during the last 2 minutes of cooking, sprinkle freshly grated Parmesan cheese over the hot wedges for extra flavor.
