1 large eggplant, sliced into 1/2-inch rounds

1 teaspoon salt

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 cup grated Parmesan cheese

1 cup marinara sauce (for serving)

1 cup shredded mozzarella cheese

Olive oil spray or 2 tablespoons olive oil

Instructions
 

Prepare the Eggplant: Sprinkle the eggplant slices with salt, placing them in a colander. Let them sit for about 30 minutes to draw out excess moisture and bitterness. Rinse under cold water and pat dry with paper towels.

    Set Up the Breading Station: Prepare three shallow dishes. In the first, add the flour. In the second, beat the eggs. In the third, combine breadcrumbs, garlic powder, oregano, basil, and grated Parmesan cheese.

      Bread the Eggplant: Dredge each eggplant slice in flour, shaking off the excess. Then dip it into the beaten eggs, letting any excess drip off. Finally, coat with the breadcrumb mixture, pressing lightly to adhere.

        Preheat and Prepare the Air Fryer: Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with olive oil or brush with olive oil.

          Air Fry the Discs: Place the breaded eggplant discs in a single layer in the air fryer basket, making sure they aren't overcrowded. Spray the tops lightly with olive oil. Air fry for 10 minutes, flipping halfway through, until crispy and golden brown.

            Build the Parmesan Dish: Once the eggplant discs are done, layer a few of them on a serving platter. Spoon marinara sauce over each layer, then sprinkle with shredded mozzarella cheese.
