1 lb white fish fillets (like cod or tilapia)

1 cup crushed cornflakes (or panko breadcrumbs)

1/2 cup all-purpose flour

2 large eggs

1 tsp paprika

1 tsp garlic powder

1/2 tsp cumin

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp cayenne pepper (optional for heat)

8 small corn tortillas

1 cup shredded cabbage (green or purple)

1/2 cup diced fresh tomatoes

1 avocado, sliced

1/4 cup fresh cilantro, chopped

Lime wedges (for serving)

Creamy sauce (optional; try a mix of sour cream, lime juice, and hot sauce)

Instructions
 

Prep the Fish: Rinse the fish fillets under cold water and pat them dry with paper towels. Cut the fillets into strips, about 2-3 inches wide.

    Set Up Breading Station: In three separate bowls, set up your breading station. In the first bowl, mix the flour with paprika, garlic powder, cumin, salt, black pepper, and cayenne pepper. In the second bowl, whisk the eggs until well combined. In the third bowl, place the crushed cornflakes.

      Bread the Fish: Dip each fish strip into the flour mixture, coating it completely. Shake off any excess flour, then dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the strip in crushed cornflakes, pressing lightly to adhere the coating.

        Air Fry the Fish: Preheat your air fryer to 400°F (200°C). Arrange the breaded fish strips in a single layer in the air fryer basket. You may need to do this in batches depending on the size of your air fryer. Lightly spray or brush the top of the fish strips with olive oil for added crispiness. Cook for 8-10 minutes, flipping halfway through, until they are golden brown and fully cooked (internal temperature of 145°F).

          Warm the Tortillas: While the fish is cooking, warm the corn tortillas. You can do this in a dry skillet over medium heat for 30 seconds on each side or wrap them in aluminum foil and place them in a preheated oven at 350°F (175°C) for about 5-10 minutes.

            Assemble the Tacos: To assemble, place a few pieces of crispy fish in the center of each tortilla. Top with a handful of shredded cabbage, diced tomatoes, and avocado slices. Sprinkle chopped cilantro on top.

              Add Sauce & Serve: Drizzle with your creamy sauce, if using, and squeeze fresh lime juice over the tacos. Serve immediately with lime wedges on the side.
