1 lb (450g) chicken breast, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

1 packet (1 oz) ranch seasoning mix

1 tsp garlic powder

1 tsp onion powder

Salt and pepper, to taste

Marinate Chicken: In a medium bowl, combine the chicken pieces and buttermilk. Stir well to ensure all pieces are coated. Cover and let marinate in the refrigerator for at least 30 minutes (up to 2 hours for best flavor).

    Prepare Dredging Station: In a separate bowl, mix together the flour, ranch seasoning, garlic powder, onion powder, salt, and pepper. In another bowl, place the panko breadcrumbs.

      Coat the Chicken: Remove the marinated chicken from the refrigerator. Shake off the excess buttermilk, then dip each chicken piece in the flour mixture, ensuring it’s fully coated. Next, dip it back in the buttermilk briefly, and then coat it in the panko breadcrumbs, pressing gently to adhere.

        Air Fryer Preparation: Preheat your air fryer to 400°F (200°C) for about 5 minutes. Spray the air fryer basket lightly with cooking spray to prevent sticking.

          Air Fry the Bites: Place the coated chicken bites in a single layer in the air fryer basket, making sure they are not overcrowded. You may need to do this in batches. Lightly spray the tops of the chicken bites with more cooking spray.
