Ingredients

2 cups almond flour

3 ripe bananas, mashed

3 large eggs

1/4 cup honey or maple syrup

1/4 cup coconut oil, melted (or unsalted butter)

1 tsp vanilla extract

1/2 tsp baking soda

1/2 tsp baking powder

1/4 tsp salt

1 tsp cinnamon (optional)

1/2 cup chopped walnuts or pecans (optional)

1/2 cup dark chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper for easy removal.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, eggs, honey (or maple syrup), melted coconut oil, and vanilla extract. Whisk until all the wet ingredients are well combined and smooth.

Combine Dry Ingredients: In another bowl, mix the almond flour, baking soda, baking powder, salt, and cinnamon (if using). Stir until the dry ingredients are well blended.

Combine Wet and Dry Mixes: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

Add Mix-ins (optional): If you’d like, fold in the chopped nuts and dark chocolate chips for added texture and flavor.

Pour and Bake: Pour the batter into the prepared loaf pan and spread it evenly. Tap the pan gently on the counter to remove any air bubbles.

Bake the Bread: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, you may cover it loosely with foil.

Cool and Serve: Once baked, remove the bread from the oven and let it cool in the pan for about 10-15 minutes. Then, transfer it to a wire rack to cool completely before slicing.

Enjoy: Serve warm or at room temperature. This delicious banana bread can be enjoyed plain or with a slather of nut butter.
