2 cups unsweetened shredded coconut

1 cup sweetened condensed milk

1 teaspoon vanilla extract

1 cup chopped almonds (plus extra for topping)

1 cup dark chocolate chips

1 tablespoon coconut oil

Prepare the Base: In a large mixing bowl, combine the unsweetened shredded coconut, sweetened condensed milk, vanilla extract, and a pinch of salt. Mix well until all the coconut is coated.

    Add Almonds: Fold in the chopped almonds, ensuring they are evenly distributed throughout the coconut mixture.

      Line the Pan: Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal. Press the coconut mixture firmly into the bottom of the prepared pan to create an even layer.

        Chill the Base: Place the pan in the refrigerator for about 30 minutes or until the mixture is firm.

          Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Heat in the microwave in 30-second increments, stirring between each until completely melted and smooth.

            Coat the Coconut Bars: Remove the coconut base from the refrigerator. Pour the melted chocolate over the top and spread it evenly with a spatula.

              Garnish: Push a few whole almonds into the top of the chocolate layer for decoration and added crunch.

                Chill Again: Return the pan to the refrigerator for another 1 to 2 hours until the chocolate is completely set.
