1 cup unsweetened shredded coconut

1 cup almond flour

1/4 cup maple syrup or honey

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 cup whole almonds

1 cup dark chocolate chips (vegan if desired)

1 teaspoon coconut oil (for chocolate coating)

Prepare the mixture: In a large mixing bowl, combine the shredded coconut, almond flour, maple syrup (or honey), melted coconut oil, vanilla extract, and sea salt. Mix thoroughly until you achieve a sticky dough-like consistency.

    Form the bites: Using your hands, take a tablespoon-sized portion of the mixture and flatten it slightly. Place a whole almond in the center and then mold the coconut mixture around the almond to form a bite-sized ball. Repeat until all the mixture is used up, placing the bites on a parchment-lined baking sheet.

      Chill the bites: Once all the bites are formed, refrigerate the tray for at least 30 minutes, allowing them to firm up.

        Melt the chocolate: In a microwave-safe bowl, combine the dark chocolate chips and the additional teaspoon of coconut oil. Microwave in 30-second increments, stirring in between, until completely melted and smooth.

          Coat the bites: Remove the coconut bites from the fridge. Use a fork to dip each bite into the melted chocolate, ensuring they are fully coated, then place them back on the parchment paper. If desired, sprinkle a little extra shredded coconut over the top for garnish.
