12 oz cheese tortellini (fresh or frozen)

1 cup cherry tomatoes, halved

1/2 cup black olives, pitted and sliced

1/2 cup green olives, pitted and sliced

1/2 cup diced salami

1/2 cup diced provolone cheese

1/4 cup diced red onion

1/2 cup roasted red peppers, chopped

1/4 cup fresh basil, chopped

1/2 cup Italian dressing (store-bought or homemade)

Salt and pepper to taste

Cook the Tortellini: In a large pot of salted boiling water, cook the cheese tortellini according to package instructions. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Ingredients: While the tortellini cools, prepare the vegetables and meats. Halve the cherry tomatoes, slice the olives, dice the salami and provolone, chop the red onion, and dice the roasted red peppers.

      Mix the Salad: In a large mixing bowl, combine the cooled tortellini, cherry tomatoes, black olives, green olives, salami, provolone cheese, red onion, roasted red peppers, and fresh basil.

        Dress the Salad: Pour the Italian dressing over the salad ingredients. Toss gently to ensure everything is evenly coated. Season with salt and pepper to taste.

          Chill and Serve: Cover the salad with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
