Apple Bread Pudding with Bourbon Caramel

6 cups of stale bread (such as brioche or challah), torn into bite-sized pieces

4 medium apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1 cup packed brown sugar

4 large eggs

2 cups whole milk

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon salt

½ cup raisins (optional)

½ cup chopped walnuts or pecans (optional)

2 tablespoons unsalted butter, softened (for greasing the dish)

For the Bourbon Caramel:

1 cup granulated sugar

6 tablespoons unsalted butter, cut into pieces

½ cup heavy cream

2 tablespoons bourbon

Pinch of salt

Prepare the Baking Dish: Preheat your oven to 350°F (175°C). Grease a large baking dish (about 9x13 inches) with the softened butter and set aside.

    Mix the Bread and Apples: In a large mixing bowl, combine the torn bread pieces, diced apples, raisins, and nuts (if using). Toss well to ensure an even distribution.

      Make the Custard Mixture: In another mixing bowl, whisk together the eggs, brown sugar, milk, vanilla extract, cinnamon, nutmeg, and salt until smooth. Pour the custard over the bread and apple mix, stirring gently to coat everything well. Let it sit for about 15 minutes, allowing the bread to soak up the custard.

        Bake the Bread Pudding: Transfer the mixture into the prepared baking dish, spreading it out evenly. Bake in the preheated oven for 45-55 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.

          While the Pudding Bakes, Make the Bourbon Caramel: In a medium saucepan over medium heat, heat the granulated sugar, stirring constantly until it melts and turns a deep amber color. Be careful not to burn it. Once melted, quickly whisk in the butter until it’s fully incorporated. Gradually add the heavy cream (be cautious, as it may bubble up), stirring until smooth. Finally, stir in the bourbon and a pinch of salt. Remove from heat and let cool slightly.

            Serve: Once the bread pudding is baked, allow it to cool for about 10 minutes. Serve warm, drizzled with the bourbon caramel sauce.
