2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 cup Greek yogurt (or sour cream)

2 cups peeled and diced apples (about 2 medium apples)

For the Cinnamon Pecan Crunch Topping:

1/2 cup chopped pecans

1/4 cup brown sugar, packed

1 teaspoon ground cinnamon

1/4 cup all-purpose flour

2 tablespoons unsalted butter, melted

Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

    Mix dry ingredients: In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Set aside.

      Cream butter and sugar: In a large mixing bowl, cream the softened butter and brown sugar together until light and fluffy. This should take about 3-4 minutes using an electric mixer.

        Add eggs and vanilla: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

          Incorporate yogurt: Mix in the Greek yogurt until well blended.

            Combine wet and dry ingredients: Gradually add the dry flour mixture to the wet mixture, stirring until just combined. Be careful not to overmix.

              Fold in apples: Gently fold in the diced apples until evenly distributed throughout the batter.

                Prepare the cinnamon pecan crunch: In a separate bowl, mix the chopped pecans, brown sugar, cinnamon, flour, and melted butter until the mixture resembles coarse crumbs.

                  Assemble the bread: Pour half of the apple bread batter into the prepared loaf pan. Sprinkle half of the cinnamon pecan crunch topping evenly over the batter. Pour the remaining batter on top, then add the rest of the pecan topping.
