Ingredients

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

1 tsp ground cinnamon

¼ tsp nutmeg (freshly grated for best flavor)

½ tsp salt

½ cup granulated sugar

¼ cup light brown sugar, packed

2 large eggs

½ cup unsweetened applesauce

¼ cup whole milk

⅓ cup vegetable oil

1 tsp vanilla extract

1 cup diced apples (about 1 medium apple, peeled and cored)

½ cup powdered sugar (for glaze)

1 tbsp milk or apple juice (for glaze)

Extra cinnamon sugar for coating (optional: ¼ cup granulated sugar + 1 tsp cinnamon)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a doughnut pan with cooking spray or oil.

Mix Dry Ingredients: In a mixing bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, nutmeg, and salt. Set aside.

Cream Sugars and Eggs: In another large bowl, whisk together the granulated sugar, brown sugar, and eggs until the mixture is smooth and slightly pale.

Combine Wet Ingredients: Add the applesauce, milk, vegetable oil, and vanilla extract to the sugar and egg mixture. Mix until well combined.

Combine Dry and Wet Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid overmixing to ensure a light doughnut texture.

Fold in Apples: Gently fold in the diced apples, ensuring they are evenly distributed throughout the batter.

Fill the Doughnut Pan: Use a piping bag or a spoon to fill each cavity of the doughnut pan about ¾ full with the batter.

Bake: Bake in the preheated oven for 12-15 minutes or until the doughnuts are lightly golden and a toothpick inserted comes out clean.

Cool the Doughnuts: Let the doughnuts cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Prepare the Glaze: In a small bowl, mix the powdered sugar with 1 tablespoon of milk or apple juice until smooth. If too thick, add a little more liquid until the desired consistency is reached.

Glaze the Doughnuts: Once the doughnuts are cool, dip the tops into the glaze or drizzle over the doughnuts. If desired, sprinkle with cinnamon sugar while the glaze is still wet.

Serve and Enjoy: Allow the glaze to set for a few minutes before serving these delightful doughnuts. Enjoy with a warm cup of coffee or tea!
