Apple Cinnamon French Toast Muffins

4 cups day-old bread, cubed (about 1 loaf)

2 large apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

4 large eggs

1 cup whole milk

1/4 cup granulated sugar

2 teaspoons vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1/4 cup brown sugar, packed

1 tablespoon butter, melted (for greasing muffin tin)

For the Topping:

1/2 cup rolled oats

1/4 cup all-purpose flour

3 tablespoons butter, melted

2 tablespoons brown sugar

1 teaspoon ground cinnamon

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with melted butter.

    Prepare Bread and Apples: In a large bowl, combine the cubed bread and diced apples. Toss them together gently to mix.

      Make Custard Mixture: In another bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, ground nutmeg, and salt until fully combined.

        Combine Mixtures: Pour the egg mixture over the bread and apple mixture. Gently fold everything together until all the bread is well-coated, making sure to absorb the custard. Let it sit for about 10 minutes to allow the bread to soak up the liquid.

          Prepare Topping: In a small bowl, mix the rolled oats, flour, melted butter, brown sugar, and ground cinnamon until crumbly. Set aside.

            Fill Muffin Cups: Using a spoon or ice cream scoop, fill each muffin cup generously with the bread and apple mixture, pressing down gently to pack them. Sprinkle the topping evenly over each muffin.
