Ingredients

2 large apples (such as Granny Smith or Honeycrisp), peeled and diced

1 tablespoon lemon juice

2 teaspoons ground cinnamon

¼ cup brown sugar, packed

1 tablespoon butter, melted

1 sheet of puff pastry, thawed

1 egg (for egg wash)

1 tablespoon sugar (for sprinkling)

Optional: icing (1 cup powdered sugar, 2-3 tablespoons milk, ½ teaspoon vanilla extract)

Instructions

Prepare the Apples: In a medium bowl, combine the diced apples and lemon juice. This will help prevent browning. Add the ground cinnamon and brown sugar, tossing until the apples are evenly coated. Set aside to marinate for about 10 minutes.

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Roll Out the Pastry: On a lightly floured surface, unfold the puff pastry sheet. Use a rolling pin to gently roll it out to smooth any creases and slightly widen it.

Assemble the Rolls: Cut the puff pastry into rectangles, approximately 3x5 inches. Brush each rectangle lightly with melted butter. Spoon a generous amount of the apple mixture onto the center of each rectangle, leaving a little space around the edges.

Fold and Seal: Fold the pastry over the filling to create a pocket. Pinch the edges firmly to seal, or use a fork to press down on the edges for an added design.

Egg Wash: In a small bowl, beat the egg. Use a pastry brush to apply the egg wash over the top of each roll to give a golden finish.

Sprinkle and Bake: Sprinkle a little sugar over the top of each roll for added sweetness and crunch. Place the rolls on the prepared baking sheet and bake in the preheated oven for 15-20 minutes until golden brown and puffed.

Make the Icing (Optional): While the rolls are baking, mix powdered sugar, milk, and vanilla extract in a bowl until smooth for a delicious drizzle. Adjust milk to achieve your desired consistency.

Cool and Serve: Once baked, let them cool for a few minutes. Drizzle with icing if desired and serve warm.
