2 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1/4 cup brown sugar

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1 cup all-purpose flour

2 tablespoons granulated sugar

2 teaspoons baking powder

1/4 teaspoon salt

1/2 cup milk

1 large egg

1 teaspoon vanilla extract

1/4 cup chopped walnuts or pecans (optional)

Oil for frying (vegetable or canola)

Powdered sugar (for dusting)

Prepare the Apples: In a medium bowl, combine the diced apples with brown sugar, 1/2 teaspoon of cinnamon, and nutmeg. Toss until the apples are evenly coated and set aside for about 15 minutes to let the flavors meld.

    Make the Batter: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and the remaining 1/2 teaspoon of cinnamon. In a separate bowl, whisk together the milk, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined (the batter will be slightly lumpy). Carefully fold in the apple mixture and nuts if using.

      Heat the Oil: In a heavy-bottomed pot or deep fryer, heat about 2 inches of oil to 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the surface, it's ready.
