Ingredients

For the Cake:

2 cups all-purpose flour

1 ½ teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon nutmeg

1 cup unsalted butter, softened

1 ½ cups granulated sugar

3 large eggs

1 tablespoon vanilla extract

2 cups peeled and diced apples (about 2 medium apples)

1 cup chopped pecans

For the Caramel Glaze:

½ cup unsalted butter

1 cup brown sugar, packed

¼ cup heavy cream

1 teaspoon vanilla extract

A pinch of salt

Instructions

Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper for easy removal.

Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

Beat the Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.

Combine with Dry Ingredients: Gradually add the dry ingredient mixture to the butter-sugar mixture, alternating with the diced apples. Mix until just combined. Be careful not to overmix.

Fold in Pecans: Gently fold in the chopped pecans until evenly distributed throughout the batter.

Bake the Cake: Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted in the center comes out clean.

Cool the Cake: Once baked, remove the cake from the oven and let it cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.

Make the Caramel Glaze: In a saucepan over medium heat, melt the butter. Add the brown sugar and cook, stirring constantly until the mixture comes to a boil. Let it boil for about 2 minutes without stirring.

Finish the Glaze: Remove from heat and carefully whisk in the heavy cream, vanilla extract, and a pinch of salt. Let the glaze cool slightly until it thickens but remains pourable.

Drizzle the Caramel Glaze: Once the cake has cooled completely, drizzle the caramel glaze generously over the top, allowing it to drizzle down the sides of the cake.

Serve and Enjoy: Slice the cake into pieces and serve. Enjoy the delightful combination of spiced apple, crunchy pecans, and luscious caramel!
