To achieve perfectly cooked Apple Pie French Toast Roll-Ups, start by preheating your skillet over medium heat. This temperature allows for an even cook without burning the outside while ensuring the filling is thoroughly warmed. A non-stick skillet or a well-seasoned cast-iron skillet is ideal, as it promotes even heat distribution and minimizes sticking.

Ingredients

6 slices of white or whole wheat bread

2 medium apples (preferably Granny Smith), peeled and diced

1 tablespoon lemon juice

2 tablespoons brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1 teaspoon vanilla extract

2 large eggs

1/2 cup milk

1 teaspoon vanilla extract (for egg mixture)

Butter or cooking spray, for frying

1/4 cup granulated sugar (for coating)

Additional ground cinnamon (to taste, for coating)

Instructions

Prepare the Apple Filling: In a medium bowl, mix the diced apples with lemon juice, brown sugar, ground cinnamon, nutmeg, and vanilla extract. Set aside to let the flavors meld.

Flatten the Bread: Use a rolling pin to flatten each slice of bread. This makes it easier to roll them up later.

Fill the Bread: Place about 1-2 tablespoons of the apple mixture at one edge of the flattened bread slice. Roll it up tightly, starting from the edge with the filling, and seal the edge with a bit of pressure.

Prepare the Egg Mixture: In a shallow dish, whisk together the eggs, milk, and the additional teaspoon of vanilla extract.

Coat with Sugar: In a separate bowl, mix the granulated sugar with additional ground cinnamon (to taste). This will be used to coat the French toast roll-ups later.

Dip and Fry: Heat a skillet or griddle over medium heat and add butter or cooking spray. Dip each roll-up in the egg mixture, ensuring they are well-coated but not soggy. Immediately place them seam-side down in the skillet.

Cook the Roll-Ups: Fry for 2-3 minutes on each side until golden brown and crispy. You may need to cook in batches depending on the size of your skillet.

Coat in Cinnamon Sugar: Once cooked, roll the warm French toast roll-ups in the cinnamon sugar mixture until well-coated.

Serve: Serve warm with a drizzle of maple syrup or a dusting of powdered sugar, and enjoy your delightful Apple Pie French Toast Roll-Ups!
