For the Oatmeal Base:

2 cups rolled oats

1 cup almond milk (or any milk of choice)

1/2 cup unsweetened applesauce

1/4 cup maple syrup (or honey)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon baking powder

1/4 teaspoon salt

For the Apple Filling:

2 medium apples, peeled, cored, and diced

2 tablespoons brown sugar (or coconut sugar)

1 teaspoon ground cinnamon

1 tablespoon lemon juice

1 tablespoon cornstarch

For the Topping:

1/2 cup oat flour (or blended rolled oats)

1/4 cup almond flour

2 tablespoons coconut oil (melted)

2 tablespoons maple syrup

1 teaspoon ground cinnamon

A pinch of salt

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal later.

    Prepare the Oatmeal Base: In a large mixing bowl, combine the rolled oats, almond milk, applesauce, maple syrup, vanilla extract, ground cinnamon, baking powder, and salt. Mix well until combined and set aside to let it thicken for about 10 minutes.

      Make the Apple Filling: In another bowl, add the diced apples, brown sugar, ground cinnamon, lemon juice, and cornstarch. Toss everything together until the apples are evenly coated. Set aside.

        Combine Mixtures: After the oatmeal mixture has thickened, spread half of it evenly into the prepared baking dish. This will serve as the base for your squares.

          Layer the Apple Filling: Evenly distribute the apple filling over the oatmeal base, spreading it out to cover the entire surface.

            Add the Remaining Oatmeal: Gently spoon the remaining oatmeal mixture on top of the apple filling. Don’t worry about covering the apples completely; it’s okay if some apple peeks through.

              Prepare the Topping: In a small bowl, mix together the oat flour, almond flour, melted coconut oil, maple syrup, ground cinnamon, and salt until crumbly. Sprinkle this mixture evenly over the top of the oatmeal squares.

                Bake the Squares: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is lightly golden and the edges are slightly crisp.

                  Cool and Serve: Remove the squares from the oven and let them cool in the pan for about 15 minutes. Use the parchment overhang to lift the squares out of the pan and place them on a wire rack to cool completely. Once cooled, cut into squares and serve warm or store in an airtight container.
