Ingredients

2 cups shredded green cabbage

1 cup shredded purple cabbage

1 cup shredded carrots

1 cup cooked rotisserie chicken, shredded

1/2 cup green onions, chopped

1/4 cup cilantro, chopped

1/4 cup sliced almonds (optional)

1/4 cup sesame seeds

For the Dressing:

1/4 cup soy sauce

2 tablespoons rice vinegar

2 tablespoons honey

1 tablespoon sesame oil

1 tablespoon fresh ginger, grated

1 clove garlic, minced

Optional: pinch of red pepper flakes for heat

Instructions

Prepare the Vegetables: In a large mixing bowl, combine the shredded green cabbage, purple cabbage, carrots, green onions, and cilantro. Toss gently to mix.

Add the Chicken: Fold in the shredded rotisserie chicken, ensuring it’s evenly distributed throughout the slaw.

Make the Dressing: In a small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, grated ginger, minced garlic, and red pepper flakes if using. Taste and adjust sweetness or saltiness as desired.

Combine: Pour the dressing over the slaw mixture and toss until all ingredients are well coated.

Garnish: If using, sprinkle the sliced almonds and sesame seeds on top for added crunch and flavor.

Chill (Optional): For best flavor, let the slaw chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld together beautifully.

Serve: Toss again before serving and enjoy as a refreshing side dish or a light main course!
