Asian Glazed Salmon Lettuce Cups

1 lb salmon fillet, skinless

3 tablespoons soy sauce

2 tablespoons honey

1 tablespoon sesame oil

1 tablespoon fresh ginger, grated

2 cloves garlic, minced

1 teaspoon sriracha (adjust to taste)

1 tablespoon rice vinegar

1 tablespoon green onions, finely chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

8 large lettuce leaves (butter or romaine)

1 small cucumber, finely diced

1 carrot, julienned

Fresh cilantro leaves (for garnish)

Instructions
 

Prepare the Marinade: In a small bowl, whisk together soy sauce, honey, sesame oil, grated ginger, minced garlic, sriracha, and rice vinegar until well combined.

    Marinate the Salmon: Place the salmon fillet in a shallow dish, and pour the marinade over it. Let it marinate in the refrigerator for at least 30 minutes, allowing the flavors to meld.

      Cook the Salmon: Preheat your grill or a non-stick skillet over medium-high heat. Remove the salmon from the marinade (reserve the marinade for later) and cook the salmon for about 4-5 minutes on each side, or until it flakes easily with a fork. If using a grill, you can also brush the reserved marinade onto the salmon while it cooks for extra flavor.

        Prepare the Lettuce Wraps: While the salmon is cooking, wash and dry the lettuce leaves thoroughly. Set them aside on a plate.

          Assemble the Cups: Once the salmon is cooked, remove it from the heat and allow it to rest for a minute. Use a fork to gently flake the salmon into bite-sized pieces.

            Fill the Lettuce Cups: Place a few pieces of flaked salmon into each lettuce leaf. Top with diced cucumber, julienned carrot, and a sprinkle of chopped green onions and sesame seeds.
