For the Chicken Marinade:

1 lb boneless, skinless chicken thighs

4 cloves garlic, minced

2 tbsp olive oil

1 tbsp red wine vinegar

2 tsp dried oregano

1 tsp ground cumin

1 tsp smoked paprika

1 tsp salt

½ tsp black pepper

Juice of 1 lemon

For the Tzatziki Sauce:

1 cup Greek yogurt

1 cucumber, grated and excess water squeezed out

2 cloves garlic, minced

1 tbsp olive oil

1 tbsp red wine vinegar

1 tsp fresh dill, chopped (or ½ tsp dried dill)

Salt and pepper to taste

For Assembly:

Pita bread or flatbreads

Thinly sliced tomatoes

Sliced red onion

Chopped lettuce

Feta cheese (optional)

Fresh parsley or dill for garnish (optional)

Instructions
 

Marinate the Chicken:

    - In a large bowl, combine minced garlic, olive oil, red wine vinegar, oregano, cumin, smoked paprika, salt, pepper, and lemon juice.

      - Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour (or ideally overnight) for the best flavor.

        Prepare the Tzatziki Sauce:

          - In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, red wine vinegar, and dill.

            - Mix well and season with salt and pepper to taste. Refrigerate for at least 30 minutes to allow flavors to meld.

              Cook the Chicken:

                - Preheat your grill or grill pan over medium-high heat. Alternatively, you can sear the chicken in a skillet.

                  - Cook the marinated chicken for about 5-7 minutes per side, until fully cooked and nicely charred. The internal temperature should reach 165°F (75°C).

                    - Once cooked, let the chicken rest for a few minutes before slicing it into strips.

                      Assemble the Gyros:

                        - Warm the pita bread or flatbreads on the grill for a minute or two until soft.
