Avocado Chicken Quesadilla Melts

2 cups cooked chicken, shredded (rotisserie is great for convenience)

1 ripe avocado, peeled and pitted

1 cup shredded Monterey Jack cheese (or cheese of your choice)

1 cup shredded cheddar cheese

1/2 cup fresh cilantro, chopped

2 tsp lime juice

1 tsp garlic powder

1 tsp cumin

Salt and pepper, to taste

4 large flour tortillas

2 tbsp olive oil (for cooking)

Optional toppings: sour cream, salsa, jalapeños, or extra cilantro

Instructions
 

Prepare the Avocado Mixture: In a mixing bowl, mash the ripe avocado with a fork until creamy. Stir in lime juice, garlic powder, cumin, and season with salt and pepper. Then add the shredded chicken and chopped cilantro, mixing well until all ingredients are combined.

    Assemble the Quesadillas: Lay out two tortillas on a clean surface. Distribute half of the Monterey Jack and cheddar cheese evenly onto each tortilla. Spread the avocado-chicken mixture over the cheese on both tortillas, then top with the remaining cheese. Finally, place the other two tortillas on top to complete the quesadilla.

      Cook the Quesadillas: Heat 1 tablespoon of olive oil in a skillet over medium heat. Carefully place one quesadilla in the skillet (you may need to make them one at a time). Cook for about 3-4 minutes on one side or until golden brown and crispy. Flip the quesadilla carefully with a spatula and add another tablespoon of olive oil if needed. Cook for another 3-4 minutes, until the second side is golden and the cheese has melted.

        Slice and Serve: Once cooked, remove the quesadilla from the skillet and let it cool for a moment. Using a sharp knife or pizza cutter, slice it into wedges. Serve with your choice of optional toppings such as sour cream, salsa, jalapeños, or extra cilantro for garnish.

          Repeat Cooking for Additional Quesadilla: If making more than one quesadilla, add more olive oil to the skillet as necessary, and repeat the cooking process.
