Avocado Chicken Quesadillas

Ingredients
  

2 cups cooked chicken, shredded (you can use rotisserie chicken for convenience)

1 ripe avocado, mashed

1 cup shredded cheese (cheddar or Monterey Jack work great)

1/2 cup diced tomatoes

1/4 cup chopped red onion

1/4 cup fresh cilantro, chopped

1 jalapeño, finely diced (seeds removed for less heat)

4 large flour tortillas

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

Sour cream and salsa (for serving)

Instructions
 

Prepare the Filling: In a mixing bowl, combine the shredded chicken, mashed avocado, diced tomatoes, red onion, cilantro, jalapeño, garlic powder, cumin, salt, and pepper. Mix until all ingredients are well combined.

    Heat the Tortillas: In a large skillet over medium heat, add a splash of olive oil. Once hot, place one tortilla in the skillet. Sprinkle a generous amount of cheese (approximately 1/4 cup) over one half of the tortilla.

      Add the Filling: Spoon a portion of the chicken and avocado mixture over the cheese on the tortilla. Fold the other half of the tortilla over the filling, creating a half-moon shape. Cook for about 3-4 minutes until the bottom is golden brown and crispy.

        Flip and Finish Cooking: Carefully flip the quesadilla with a spatula and cook the other side for an additional 3-4 minutes, or until it’s golden and the cheese has melted.

          Repeat: Remove the cooked quesadilla from the skillet and place it on a cutting board. Repeat the process with the remaining tortillas and filling.

            Slice and Serve: Cut each quesadilla into wedges. Serve hot with sour cream and salsa on the side for dipping.
