Ingredients

2 ripe avocados, diced

1 cup fresh corn kernels (cooked or raw)

1 medium red onion, finely chopped

1 red bell pepper, diced

1/2 cup cherry tomatoes, halved

1 jalapeño pepper, seeded and minced (optional for heat)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon cumin powder

Salt and pepper to taste

Instructions

In a large mixing bowl, combine the diced avocados, fresh corn kernels, finely chopped red onion, diced red bell pepper, and halved cherry tomatoes.

If you like a bit of heat, add the minced jalapeño pepper to the bowl.

Add the chopped cilantro to the mixture, ensuring even distribution.

Squeeze the juice of the two limes over the ingredients and sprinkle in the cumin powder.

Gently stir all the ingredients together, taking care not to mash the avocados.

Season with salt and pepper to your taste, and taste for balance; adjust lime or seasoning if necessary.

Let the salsa sit for about 15 minutes to allow the flavors to meld together before serving.
