4 large eggs

1 ripe avocado, mashed

2 tablespoons plain Greek yogurt

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1/4 teaspoon garlic powder

Salt and pepper to taste

2 green onions, finely chopped

1/4 cup diced celery

1/4 cup diced red bell pepper

1 head of romaine lettuce or butter lettuce (for cups)

Fresh dill or parsley for garnish (optional)

Instructions
 

Cook the Eggs: Place the eggs in a medium saucepan and cover with cold water. Bring to a boil over medium-high heat. Once boiling, cover and remove from heat. Let the eggs sit for about 12 minutes. Afterward, transfer them to a bowl of ice water for a few minutes to cool.

    Prepare the Egg Salad Base: Peel the cooled eggs and chop them into small pieces. In a large bowl, combine the chopped eggs with the mashed avocado, Greek yogurt, Dijon mustard, lemon juice, garlic powder, and season with salt and pepper. Mix until well combined and slightly chunky.
