Avocado Pesto Chicken Wraps

2 large tortillas (whole wheat or spinach)

1 cup cooked chicken breast, shredded or sliced

1 ripe avocado, pitted and halved

1/4 cup fresh basil leaves

1/4 cup grated Parmesan cheese

1/4 cup pine nuts (or walnuts)

2 tablespoons olive oil

2 tablespoons lemon juice

Salt and pepper to taste

1 medium tomato, sliced

1/2 cup mixed greens (like arugula and spinach)

Make the Avocado Pesto: In a food processor, combine the avocado, basil leaves, Parmesan cheese, and pine nuts. Blend until smooth. While the processor is running, slowly drizzle in the olive oil and lemon juice until the mixture is well combined and creamy. Season with salt and pepper to taste.
