Ingredients

1 cup milk

1 cup granulated sugar

1/2 cup melted butter

1/2 cup all-purpose flour

3 large eggs

2 teaspoons vanilla extract

1/4 teaspoon salt

Zest of 1 large lemon

1/2 cup fresh lemon juice (about 2 large lemons)

Powdered sugar (for dusting)

Fresh mint leaves (for garnish, optional)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare a muffin tin by greasing it lightly with butter or non-stick spray.

Blend Ingredients: In a blender or food processor, combine the milk, granulated sugar, melted butter, flour, eggs, vanilla extract, salt, lemon zest, and lemon juice. Blend until smooth and well combined, about 30-40 seconds.

Fill Muffin Tins: Pour the batter evenly into the prepared muffin tin, filling each cup about 3/4 full. The batter will separate into a custard layer and a cake-like layer during baking.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the edges are set and a toothpick inserted in the center comes out clean.

Cool Down: Once baked, remove the pies from the oven and let them cool in the tin for about 10 minutes. Carefully remove them from the tin and transfer to a cooling rack to cool completely.

Serve: Once cooled, dust the tops of the mini pies with powdered sugar for an elegant touch. Garnish with fresh mint leaves if desired. These pies are delightful served warm or chilled.

Enjoy: Serve at your next gathering or as a delightful treat to brighten up your day!
