1 medium zucchini, grated

1 cup all-purpose flour

1/2 cup whole wheat flour

1 teaspoon baking powder

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/3 cup vegetable oil

2 large eggs

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease them lightly.

    Prepare the Zucchini: Grate the zucchini using a box grater. Use a clean kitchen towel to squeeze out excess moisture from the grated zucchini. Set aside.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

        Combine Wet Ingredients: In another bowl, whisk together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth and creamy.
