1 cup elbow macaroni

1 lb ground beef or turkey

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes with chilies

1 packet chili seasoning mix

1 cup shredded cheddar cheese (plus extra for serving)

4 large flour tortillas

1 cup sour cream

1/2 cup diced green onions

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Olive oil for cooking

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Brown the Meat: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground beef or turkey, season with salt and pepper, and cook until browned, about 5-7 minutes.

      Add the Beans and Tomatoes: Stir in the kidney beans, diced tomatoes with their juices, chili seasoning mix, garlic powder, and onion powder. Bring the mixture to a simmer.

        Combine and Cook: Once simmering, add the cooked macaroni to the skillet. Mix well to combine all ingredients and cook for an additional 5 minutes until heated through. Stir in 1 cup of shredded cheddar cheese until melted and gooey.

          Prepare the Tortillas: While the chili mac is simmering, warm the flour tortillas in a dry skillet or microwave until pliable.

            Assemble the Wraps: Spoon a generous portion of the chili mac mixture onto the center of each tortilla. Top with sour cream, additional cheddar cheese, and a sprinkle of diced green onions.

              Wrap It Up: Fold in the sides of the tortilla and roll it up tightly from the bottom. Repeat with remaining tortillas.

                Serve: Cut each wrap in half and serve warm. Add extra sour cream or cheese on the side for dipping if desired.
