2 large apples, peeled and diced (preferably Granny Smith or Honeycrisp)

1 cup all-purpose flour

1/2 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1/4 teaspoon salt

1/3 cup milk

2 large eggs

1 teaspoon vanilla extract

2 tablespoons melted butter

1/2 cup powdered sugar (for glaze)

1-2 tablespoons milk (for glaze)

Extra cinnamon for dusting (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare the Apples: In a medium bowl, combine the diced apples with 1 tablespoon of sugar and a sprinkle of cinnamon. Set aside to let them macerate while you prepare the batter.

      Mix the Dry Ingredients: In a large bowl, whisk together the flour, 1/2 cup sugar, baking powder, cinnamon, nutmeg (if using), and salt until well combined.

        Combine Wet Ingredients: In another bowl, beat the eggs, then add milk, vanilla extract, and melted butter. Mix until smooth.

          Combine Wet and Dry Mixtures: Pour the wet mixture into the dry ingredients. Stir gently until just combined; do not overmix. Fold in the prepared apples until evenly distributed.

            Scoop the Mixture: Using a large spoon or an ice cream scoop, portion out the batter onto the prepared baking sheet, leaving some space between each fritter.

              Bake: Bake in the preheated oven for 15-20 minutes, or until the fritters are golden brown and baked through. You can test doneness with a toothpick—if it comes out clean, they’re ready!

                Make the Glaze: While the fritters are baking, prepare the glaze. In a small bowl, mix the powdered sugar with 1-2 tablespoons of milk until you achieve a smooth, drizzle-able consistency. Adjust milk as necessary to reach your desired thickness.
