2 ripe bananas, mashed

1 cup rolled oats

1/2 cup milk (dairy or plant-based)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup chopped walnuts (plus extra for topping)

1/4 cup dried fruit (raisins or cranberries, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a muffin tin or line with silicone liners.

    Combine Wet Ingredients: In a large mixing bowl, combine the mashed bananas, milk, honey (or maple syrup), and vanilla extract. Mix until well incorporated.

      Mix Dry Ingredients: In another bowl, whisk together the rolled oats, baking powder, cinnamon, and salt.

        Combine Mixtures: Pour the dry ingredients into the wet mixture. Stir until just combined.

          Fold in Walnuts: Gently fold in the chopped walnuts and dried fruit (if using), ensuring they are evenly distributed throughout the mixture.
