9-12 lasagna noodles

2 cups cooked chicken, shredded

2 cups ricotta cheese

1 cup grated Parmesan cheese

2 cups shredded mozzarella cheese (divided)

2 cups Alfredo sauce (store-bought or homemade)

1 egg

2 tablespoons fresh parsley, chopped (plus more for garnish)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Olive oil for greasing

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Lasagna Noodles: Boil a large pot of salted water. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside on a greased surface to prevent sticking.

      Prepare Filling: In a mixing bowl, combine shredded chicken, ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, egg, garlic powder, onion powder, and parsley. Mix well until fully combined. Add salt and pepper to taste.

        Assemble Rollups: Spread 1/4 cup of Alfredo sauce on the bottom of a baking dish to prevent sticking. Take one lasagna noodle and spread a generous amount of the chicken filling onto it. Roll it up tightly from one end to the other. Place seam-side down in the baking dish. Repeat with remaining noodles and filling.

          Add Sauce and Cheese: Once all rollups are placed in the dish, pour the remaining Alfredo sauce over the top. Sprinkle the remaining mozzarella cheese over the sauce, ensuring an even layer.

            Bake: Cover the baking dish with aluminum foil (to prevent browning) and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
