Baked Falafel Zucchini Sliders

1 can (15 oz) chickpeas, drained and rinsed

1 cup grated zucchini (about 1 medium zucchini)

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup finely chopped onion

2 cloves garlic, minced

1 tbsp fresh parsley, chopped

1 tbsp fresh cilantro, chopped

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

1 tbsp olive oil

1 egg (or flax egg for a vegan option)

Slider buns (or lettuce wraps for a low-carb option)

Optional toppings: sliced tomatoes, cucumber, and tahini sauce or yogurt sauce

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Zucchini: Grate the zucchini and place it in a clean kitchen towel. Twist the towel to squeeze out as much moisture as possible. This will help maintain the texture of the sliders.

      Mix Ingredients: In a large bowl, combine the drained chickpeas, squeezed zucchini, breadcrumbs, chopped onion, minced garlic, parsley, cilantro, ground cumin, ground coriander, paprika, salt, black pepper, olive oil, and the egg (or flax egg). Mash the mixture with a fork or potato masher until well combined but still a little chunky.

        Form the Sliders: Wet your hands to prevent sticking, then take a handful of the mixture and form it into small patties, about 2-3 inches wide. Place on the prepared baking sheet.

          Bake the Patties: Bake in the preheated oven for 20-25 minutes, flipping halfway through. The patties should be golden brown and crispy on the outside.
