Ingredients

4 haddock fillets (about 6 oz each)

1 cup panko breadcrumbs

4 cloves garlic, minced

1/4 cup fresh parsley, finely chopped

1/2 teaspoon smoked paprika

1/4 teaspoon red pepper flakes (optional)

1/2 cup grated Parmesan cheese

1/4 cup unsalted butter, melted

Juice of 1 lemon

Salt and pepper to taste

Lemon wedges, for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper or lightly grease it.

Prepare the Maine Sauce: In a small saucepan, melt the butter over low heat. Add the minced garlic and sauté for about 1-2 minutes, being careful not to let it brown. Remove from heat and let it cool slightly, then stir in lemon juice.

Make the Garlic Crumbs: In a large mixing bowl, combine the panko breadcrumbs, minced garlic, parsley, smoked paprika, red pepper flakes (if using), Parmesan cheese, and a pinch of salt and pepper. Pour in the melted butter mixture and stir until all the crumbs are evenly coated.

Prepare the Haddock: Place the haddock fillets in the prepared baking dish. Season both sides with salt and pepper. Spoon the garlic crumb mixture generously over the top of each fillet, pressing down gently to ensure it sticks.

Bake: Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the haddock is opaque and flakes easily with a fork. The crumb topping should be golden and crispy.

Serve: Remove the baking dish from the oven and allow it to cool for a few minutes. Serve hot with lemon wedges on the side for squeezing over the fish.
