8 ounces elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1/2 cup Parmesan cheese, grated

3 cups whole milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

1 cup breadcrumbs (Panko or regular)

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 3-quart baking dish or a large skillet with butter or non-stick spray.

    Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

      Make the Cheese Sauce: In a saucepan over medium heat, melt the butter. Whisk in the flour and cook, stirring constantly, for about 2 minutes to create a roux. Gradually whisk in the milk and continue to stir until the mixture thickens (about 5-7 minutes).

        Add Seasonings: Stir in the garlic powder, onion powder, smoked paprika, salt, and pepper. Remove the sauce from heat and slowly mix in the cheddar, Gruyère, and Parmesan cheese until melted and smooth.

          Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce and stir well to combine. Ensure all pasta is evenly coated in the cheesy goodness.

            Prepare for Baking: Pour the macaroni and cheese mixture into the prepared baking dish. Even out the top with a spatula.
