1 teaspoon baking powder

1 teaspoon cinnamon

½ teaspoon salt

1¾ cups milk (dairy or non-dairy)

¼ cup maple syrup or honey

2 large eggs

1 teaspoon vanilla extract

1 cup mixed berries (fresh or frozen, such as blueberries, raspberries, and strawberries)

½ cup chopped nuts (optional, such as walnuts or almonds)

2 tablespoons chia seeds or flaxseeds (optional for added nutrition)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin with non-stick spray or line with muffin liners.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt. Stir until well mixed.

      Combine Wet Ingredients: In a separate bowl, whisk together the milk, maple syrup (or honey), eggs, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix well. Fold in the mixed berries and chopped nuts, if using, along with the chia seeds or flaxseeds.
