Baked Parmesan Crusted Salmon

4 salmon fillets (about 6 oz each)

1 cup grated Parmesan cheese

1/2 cup panko breadcrumbs

2 tablespoons olive oil

2 tablespoons Dijon mustard

2 tablespoons fresh lemon juice

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon slices (for serving)

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    In a small bowl, mix together the grated Parmesan cheese, panko breadcrumbs, olive oil, garlic, oregano, paprika, salt, and pepper until well combined. This will be your crunchy topping.

      In another bowl, whisk together the Dijon mustard and fresh lemon juice until smooth. This mixture will help the topping stick to the salmon.

        Place the salmon fillets skin-side down on the prepared baking sheet. Pat them dry with a paper towel and season with salt and pepper.

          Brush the Dijon mixture evenly over the top of each salmon fillet.

            Generously spoon the Parmesan and breadcrumb mixture over the mustard-coated salmon, pressing down lightly to ensure it adheres well.

              Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the topping is golden and crispy. The internal temperature of the salmon should register 145°F (63°C).

                Once cooked, remove the salmon from the oven and let it rest for a couple of minutes before serving.

                  Garnish with fresh parsley and serve with lemon slices on the side for a zesty touch.
