Baked Sausage and Pepper Penne

12 ounces penne pasta

1 tablespoon olive oil

1 pound Italian sausage (mild or spicy, casings removed)

1 medium onion, thinly sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

3 cloves garlic, minced

1 can (28 ounces) crushed tomatoes

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta until al dente according to package directions. Drain and set aside.

      Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add the sliced onion and cook until soft, about 3-4 minutes. Add the red and yellow bell peppers and continue to sauté for another 5 minutes. Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

          Combine Ingredients: Return the browned sausage to the skillet. Pour in the crushed tomatoes and sprinkle in the oregano and basil. Season with salt and pepper to taste. Stir until well combined and let the mixture simmer for about 5 minutes.

            Mix the Pasta: In a large mixing bowl, combine the cooked penne with the sausage and pepper mixture. Stir in 1 cup of shredded mozzarella cheese and mix until evenly distributed.

              Transfer to Baking Dish: Pour the penne mixture into a greased 9x13-inch baking dish. Spread it out evenly, then sprinkle the remaining ½ cup of mozzarella cheese and the Parmesan cheese on top.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

                  Garnish and Serve: Remove the baked penne from the oven and let it cool for a few minutes. Garnish with fresh basil leaves, if desired. Serve hot and enjoy!
