1 cup cauliflower florets, steamed

1 cup broccoli florets, steamed

1 medium carrot, grated

1 small zucchini, grated

1/2 cup breadcrumbs (preferably whole wheat or gluten-free)

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1/4 cup ground flaxseed mixed with 1/4 cup water (flax egg)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper to taste

Olive oil spray (or any cooking spray)

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prep the Flax Egg: In a small bowl, mix the ground flaxseed with water. Let it sit for about 5-10 minutes until it thickens.

      Blend the Veggies: In a food processor, combine the steamed cauliflower, steamed broccoli, grated carrot, and grated zucchini. Pulse until you achieve a coarse mixture, making sure not to over-blend—it should maintain some texture.

        Combine Ingredients: In a large mixing bowl, combine the veggie mixture, breadcrumbs, grated Parmesan cheese (or nutritional yeast), flax egg, garlic powder, onion powder, oregano, salt, and pepper. Mix well until all the ingredients are integrated.

          Shape the Nuggets: Using your hands, take small portions of the mixture and shape them into bite-sized nuggets or patties. Make sure they hold together well; if too crumbly, add a little more flax egg or breadcrumbs as needed.

            Bake: Place the nuggets on the prepared baking sheet. Lightly spray the tops with olive oil. Bake in the preheated oven for about 20-25 minutes, flipping them halfway through, until they are golden brown and crispy.
